why can't I just gravity filter (mspaint)

so I've read a lot, and searched this site, only really only found one guy who does what I think I want to set up. but he does it in stages, I want to set up a cascade of gravity filters.

I own the restaurant, so I know what's in my oil, and don't need to mess with de-water, but I will test it.

I want to take a cube cap and put a ball valve in it, then use that lid to start my flow through a t-shirt into a bucket with a valve that will feed through a 100 Micon bag into a bucket with a valve feeding a 50 micron into a bucket with a valve via a 5 or 10 micron then back into a clean cube.

I know this takes a while, but I can walk away. as each bucket holds more then the cube.

am i fooling my self that is will work? I'm looking at 30gl every two weeks max as that is all i toss.



i don't' want to mess with pumps and drums ect,
